One-Pot Chicken Dinners
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 cup uncooked long-grain white rice
- 1 cup chicken broth
- 1/4 cup diced onion
- 1/4 cup diced green bell pepper
- 1/4 cup diced red bell pepper
- 1 can (14 oz) diced tomatoes, undrained
- 1 tsp garlic powder
- 1 tsp dried oregano leaves
- 1 bay leaf
- Salt and pepper to taste
Instructions:
- Season chicken breasts lightly with salt and pepper. In a large skillet or Dutch oven, brown chicken over medium heat until golden brown, about 5-7 minutes per side.
- Add rice, chicken broth, onion, bell peppers, tomatoes, garlic powder, oregano, bay leaf, salt, and pepper to the skillet or Dutch oven. Stir well.
- Cover and simmer over low heat until rice is tender and chicken is cooked through, about 20-25 minutes.
- Remove from heat and let stand for 5 minutes. Discard the bay leaf and serve hot.
One Pot Roasted Chicken Dinner
Ingredients:
- 1 whole chicken
- 5-6 red potatoes, quartered
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- 1/4 cup olive oil
- 1 tbsp dried thyme
- 1 tbsp dried rosemary
- 1 tbsp garlic powder
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F (190°C). Place the chicken in a large Dutch oven or oven-safe pot.
- Place the quartered potatoes, chopped carrots, chopped celery, and chopped onion around the chicken in the pot.
- In a small bowl, mix together the olive oil, thyme, rosemary, garlic powder, salt, and pepper. Brush the mixture over the chicken and vegetables.
- Cover the pot with a lid or foil and bake for 1 hour and 15 minutes. Remove the lid or foil and bake for an additional 15-20 minutes, or until the chicken is browned and cooked through.
- Remove the pot from the oven and let it rest for 5 minutes before serving.
